Has anyone developed an app that does an in-app-purchase using a crypto currency?

 

How did you do this technically, do you call a wallet app using CFBundleURLSchemes or something like that?

 

Does Apple or Google have issues where an app takes a crypto payment, because obviously they miss out on the 30% fee.

Apple for certain and probably Google requires you to use their in-app purchases for things that are soft goods. That is something that can be unlocked, electronic download, etc. If you're selling physical goods (think eBay, Amazon) then they let you take other payments. So it all depends on what you're selling.

Do you know what the situation is with gambling? If the app allows people to gamble crypto - on something like poker, etc.

I don't know anything about how gambling apps are handled.
